Pistachio Courgette Chocolate Cake

We hope everyone had a lovely long weekend! As the weather was a little hit and miss, we decided to do some cake baking with our handmade wooden spoons (we've gone a little baking crazy recently). We love the cookbook 'Red Velvet and Chocolate Heartache' by Harry Eastwood and we made her pistachio courgette chocolate cake, it's chocolate heaven with healthy nuts and vegetables and simple to make!

For the icing we made a chocolate mascarpone frosting. After trying to find recipes which had less icing sugar, we went a little freestyle with the recipe from bitedelite.com, (they have some delicious recipes and beautiful food photography) we used their base recipe of mascarpone, butter, vanilla essence and cocoa powder but only used 70gr of icing sugar (involved a lot of tasting, a perk of baking). You could eat the frosting by itself, it's so good! 

We served the cake on our new green blue dessert plate, a perfect fit for an 18cm cake, with our vintage bowl for the creme fraiche (also used for the baking prep) and our small vintage plates for eating. The weekend may be over but we have cake treats for the week!
