Making Gooseberry Fool

This is a late post from a couple of weeks ago, visiting friends in the countryside, when their gooseberries and white currents were ready for picking, there is something very satisfying when you pick your own fruit! We made a classic gooseberry fool (we love the Nigel Slater recipe) but swapped a third of the cream for natural yoghurt, and topped with the beautiful white currents, so creamy and light, the taste of summer! Now thinking about gooseberry breakfast ideas... Happy sunny weekend all!
